Ingredients

  • 1 tablespoon olive oil for sautéing
  • 1 yellow onion diced
  • 2 garlic cloves minced
  • ½ lb. ground beef choose lean for less fat
  • 1 packet taco seasoning about 1 oz. or homemade version
  • 15 oz. can diced tomatoes with juices
  • 4 oz. can diced green chiles with juices
  • ½ lb. small pasta shells uncooked any small pasta works
  • 2 cups beef broth use low-sodium or homemade
  • 1 cup cheddar cheese shredded for melting
  • 2 green onions sliced for garnish

Instructions

  • Heat olive oil in a large skillet or wide-bottomed pot over medium heat.
  • Add the diced onion and minced garlic, cooking until the onions are softened and fragrant.
  • Stir in the ground beef and taco seasoning, cooking until the beef is browned and fully cooked through.
  • Add the diced tomatoes (with juices) and diced green chiles (with juices) to the beef mixture, stirring to combine.
  • Pour in the uncooked pasta and beef broth, stirring to mix everything together. It’s fine if the pasta isn’t fully submerged.
  • Place a lid on the pot, increase the heat to medium-high, and bring the broth to a boil. Once boiling, give the pasta a stir, then reduce the heat to medium-low. Cook with the lid on, stirring occasionally, for about 10 minutes, or until the pasta is tender and the sauce has thickened.
  • Once the pasta is cooked, stir in the shredded cheddar cheese until melted and well combined.
  • Top with sliced green onions and serve warm.
