15oz.can diced tomatoeswith juices
4oz.can diced green chileswith juices
½lb.small pasta shellsuncooked any small pasta works
2cupsbeef brothuse low-sodium or homemade
1cupcheddar cheeseshredded for melting
2green onionssliced for garnish
Instructions
Heat olive oil in a large skillet or wide-bottomed pot over medium heat.
Add the diced onion and minced garlic, cooking until the onions are softened and fragrant.
Stir in the ground beef and taco seasoning, cooking until the beef is browned and fully cooked through.
Add the diced tomatoes (with juices) and diced green chiles (with juices) to the beef mixture, stirring to combine.
Pour in the uncooked pasta and beef broth, stirring to mix everything together. It’s fine if the pasta isn’t fully submerged.
Place a lid on the pot, increase the heat to medium-high, and bring the broth to a boil. Once boiling, give the pasta a stir, then reduce the heat to medium-low. Cook with the lid on, stirring occasionally, for about 10 minutes, or until the pasta is tender and the sauce has thickened.
Once the pasta is cooked, stir in the shredded cheddar cheese until melted and well combined.
Top with sliced green onions and serve warm.
