Ingredients

  • ½ cup 115g salted butter Softened
  • ½ cup 115g granulated sugar Sweetens the base
  • 1 teaspoon vanilla extract For flavor
  • 1 egg white Helps bind the dough
  • 1 ½ cups 228g all-purpose flour Main structure of the dough
  • 1 teaspoon baking powder Leavening agent
  • 22 caramels Unwrapped
  • 1 tablespoon milk To help melt the caramel
  • 2 ¼ cups 450g milk chocolate chips For the chocolate topping

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a stand mixer, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the egg white and vanilla extract. Mix until fully combined.
  • Add the all-purpose flour and baking powder. Mix until the dough forms and is well-combined.
  • Roll the dough out to a thickness of ¼ to ½ inch. Use a round cookie cutter to cut out circles, then transfer to an ungreased cookie sheet.
  • Bake at 350°F (175°C) for 6-8 minutes, or until the cookies are puffed and no longer glossy. Remove from the oven.
  • Let the cookies cool completely on a wire rack.
  • While the cookies cool, microwave the caramels and milk together in 30-second intervals, stirring after each, until smooth and creamy.
  • Spoon a small amount of the caramel onto each cookie, spreading to nearly cover the surface.
  • Place the cookies in the fridge for 10-15 minutes to allow the caramel to set.
  • In the meantime, melt the chocolate chips in the microwave, using 30-second intervals, until completely smooth and incorporated.
  • Spread a small amount of melted chocolate over each cookie. Let the chocolate set before serving.
