Instructions
Stir the softened cream cheese, finely shredded sharp cheddar cheese, finely chopped pimento-stuffed olives, olive brine, garlic powder, and black pepper until smooth and well combined.
Lay out the flour tortillas flat on a clean surface. Spread 2-3 tablespoons of the cream cheese mixture over each tortilla, covering the entire surface evenly.
Arrange 3-4 slices of turkey along the center of the tortilla, ensuring minimal overlap to create an even layer. Leave about ¼ inch of the tortilla edges exposed to help seal the roll. Add a single layer of spinach leaves over the turkey.
Starting from the edge closest to you, roll the tortilla tightly, tucking in the fillings as you go to ensure a secure roll.
With the seam side facing down, slice the roll into 1-inch wide pinwheels using a sharp knife.
Arrange the pinwheels on a platter, cut side up, or place them into an airtight container for meal prep. If desired, insert a decorative toothpick into each pinwheel to help hold them together.
