  • Meat thermometer
  • Aluminum foil

Ingredients

  • 4-5 pound pork loin
  • 2 tablespoons olive oil or yellow mustard binder
  • 2 tablespoons brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon black pepper
  • 1 tablespoon kosher salt
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

Preparation

  • Remove pork from refrigerator
  • Trim excess fat
  • Pat dry with paper towels
  • Inject if using mixture
  • Apply binder
  • Coat with dry rub

Smoking Process

  • Preheat smoker to 225°F
  • Place pork fat side up
  • Spritz every 45 minutes
  • Smoke to 145°F internal temp
  • Rest 15-20 minutes before slicing

Notes

  • Bring meat to room temperature
