Ingredients

  • 1 pound Velveeta cheese cubed ($5)
  • 1 pound ground beef $4
  • 2 cans 10 oz each Rotel diced tomatoes with green chilies ($2)
  • 1 tablespoon taco seasoning $0.25
  • ½ medium onion diced (optional) ($0.50)
  • Sliced vegetables carrots, celery, bell peppers

Instructions

Brown the Meat

  • Place your skillet over medium-high heat
  • Add the ground beef and break it into small pieces
  • Add diced onion if using
  • Cook until no pink remains (about 8-10 minutes)
  • Stir in taco seasoning
  • Drain excess fat

Prepare the Cheese

  • Cut Velveeta into 1-inch cubes for faster melting
  • Place cheese cubes in microwave-safe bowl
  • Add both cans of Rotel (don't drain!)
  • Microwave for 5 minutes, stirring every 2 minutes
  • Keep stirring until smooth

Mix and Serve

  • Add cooked ground beef to cheese mixture
  • Stir until well combined
  • Transfer to serving bowl
  • Keep warm in slow cooker if desired
