Ingredients

  • 4 Boneless skinless chicken breasts - About 6-8 oz each
  • 1 cup Parmesan cheese - Freshly grated, plus extra for garnish
  • ½ cup Panko breadcrumbs
  • ¼ cup Regular breadcrumbs
  • 2 teaspoon Italian seasoning
  • 1 teaspoon Garlic powder
  • ½ teaspoon Onion powder
  • ½ teaspoon Paprika
  • ¼ teaspoon Black pepper
  • ½ teaspoon Salt
  • 2 Eggs
  • 2 tablespoon Milk
  • 3 tablespoon Olive oil - Or cooking spray for air fryer
  • 1 tablespoon Fresh parsley - Chopped, for garnish
  • 4 tablespoon Mayonnaise - About 1 tablespoon per chicken breast

Instructions

  • Pound chicken breasts to ¾-inch thickness between plastic wrap. Pat dry with paper towels. Preheat oven to 425°F or air fryer to 375°F.
  • In a shallow dish, combine parmesan, panko, regular breadcrumbs, Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper.
  • Spread mayo on both sides of each chicken breast. Press into the breadcrumb-Parmesan mixture until fully coated. Let rest 5 minutes.
  • Line baking sheet with parchment, drizzle with oil, and arrange chicken with space between. Bake 20–25 min until internal temp hits 165°F. Broil last 2 min for golden crust.
  • Spray air fryer basket lightly with oil. Place chicken in basket (work in batches if needed). Air fry at 375°F for 10–12 min, flipping halfway through.
  • Let chicken rest 3–5 min before serving. Garnish with parsley and extra parmesan. Optional: Add ½ tablespoon butter on each piece for restaurant-style richness.
