  • Meat thermometer (optional)

Ingredients

For the Steak Patties:

  • 2 pounds ground beef 80/20
  • ½ cup breadcrumbs
  • 1 large egg
  • ¼ cup milk
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon mustard powder

For the Mushroom Gravy:

  • 16 ounces mushrooms sliced
  • 1 onion diced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

Prepare the Meat Patties

  • Combine ground beef, breadcrumbs, egg, milk, diced onion, garlic, Worcestershire sauce, salt, pepper, and mustard powder in a large bowl.
  • Mix gently until just combined - avoid overmixing to keep the patties tender.
  • Shape mixture into 6-8 oval patties, about 1-inch thick.
  • Create a slight dimple in the center of each patty to prevent shrinking.

Cook the Patties

  • Heat a large skillet over medium-high heat.
  • Cook patties for 4-5 minutes per side until browned.
  • Transfer to a plate and cover with foil.

Make the Gravy

  • In the same skillet, add butter and sauté mushrooms and onions until golden brown.
  • Sprinkle flour over vegetables and cook for 1 minute.
  • Gradually whisk in beef broth, Worcestershire sauce, and garlic powder.
  • Simmer until thickened, about 5 minutes.
  • Return patties to the skillet and cook for additional 5-7 minutes until heated through.

Notes

  • Let meat mixture rest 10 minutes before forming patties
  • Create dimple in patty centers to prevent shrinking
  • Don't overmix meat to keep patties tender
  • Bring meat to room temperature before cooking
  • Form patties up to 24 hours ahead
  • Store uncooked patties between wax paper in refrigerator
  • Make gravy up to 2 days ahead
