Prepare Filling:
Mix sliced peaches with sugar, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla
Transfer to prepared baking dish
Make Topping:
Combine flour, oats, brown sugar, cinnamon, and salt
Cut in cold butter until mixture resembles coarse crumbs
Assemble & Bake:
Sprinkle topping evenly over peaches
Bake 40-45 minutes until golden and bubbly
Cool 15 minutes before serving
