Season salmon with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear salmon for 3-4 minutes per side until golden. Remove from pan.
In the same pan:
Melt butter
Add minced garlic, cook 1 minute
Add cream, sun-dried tomatoes, Italian seasoning
Simmer 3-4 minutes until slightly thickened
Stir in parmesan cheese
Return salmon to pan, spoon sauce over fish.
Cook 3-4 minutes until salmon is done.
Garnish with fresh parsley.

- Store leftovers in fridge up to 2 days
- Best when served fresh and hot
