  • 12-15 corn or flour tortillas
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded Mexican cheese blend
  • 1 cup fresh cilantro chopped
  • 2 limes cut into wedges
  • 1 avocado sliced
  • Sour cream optional
  • Hot sauce optional

Instructions

Prep Chicken

  • Cut chicken into ½-inch cubes
  • Mix all seasonings in a bowl
  • Toss chicken with seasonings until coated

Cook

  • Heat oil in large skillet over medium-high heat
  • Cook onion 2-3 minutes until translucent
  • Add garlic, cook 30 seconds
  • Add chicken, cook 8-10 minutes until done

Warm Tortillas

  • Heat in dry skillet 30 seconds per side
  • Or wrap in foil, warm in 350°F oven for 10 minutes

Assemble

  • Fill tortillas with chicken
  • Add toppings as desired
  • Serve with lime wedges
