Ingredients

  • 4 large eggs room temperature
  • 2 cups whole milk
  • ½ cup granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon ground nutmeg plus extra for garnish
  • Hot water for water bath

Instructions

  • Preheat oven to 325°F (165°C)
  • Gently whisk eggs until just combined
  • Add sugar and salt, whisk until incorporated
  • Gradually stir in milk and vanilla extract
  • Strain mixture through fine-mesh strainer
  • Pour into prepared baking dish(es)
  • Sprinkle nutmeg on top
  • Place in water bath
  • Bake 45-55 minutes (30-35 for individual cups)

Notes

  • Test doneness with knife inserted near center
