Ingredients

  • 2 Breasts Boneless Chicken - Cooked and shredded.
  • 10oz Fresh/Frozen Spinach - Wilted and drained.
  • 12oz Package Lasagna Noodles - Boiled if using regular noodles.
  • 15oz Container Ricotta Cheese - Can substitute with cottage cheese.
  • 2cups Grated Mozzarella Cheese - Can substitute with Italian blend.
  • ½cup Grated Parmesan Cheese - Can substitute with Romano.
  • 3cloves Cloves Garlic - Minced.
  • 1 Medium Onion - Chopped.
  • 1tbsp Fresh Basil - Chopped.
  • ¼tsp Nutmeg - Pinch of fresh ground nutmeg.
  • 1tsp Lemon Zest - Adds freshness and acidity.
  • ½tsp Crushed Red Pepper - Optional for spice.
  • 1tsp Salt For seasoning.
  • 1tsp Pepper - For seasoning.
  • 2cups Marinara Sauce - sauce.
  • 2cups Alfredo Sauce - Or use a combo of both sauces.

Instructions

  • Cook and shred chicken breasts.
  • Wilt fresh spinach or thaw and drain frozen spinach well.
  • Mix ricotta, mozzarella, Parmesan, garlic, onion, and seasonings to make the cheese filling.
  • Heat marinara or Alfredo sauce on the stove.
  • Boil lasagna noodles if not using no-boil noodles.
  • Start with a layer of sauce, then layer noodles, cheese mixture, chicken, and spinach. Repeat layers, finishing with cheese and sauce on top.
  • Cover with foil and bake for 25 minutes. Uncover and bake for another 15 minutes.
  • Let the lasagna rest for 15-20 minutes before cutting into squares and serving.
