Ingredients

  • 4 cups cooked chicken breast finely chopped
  • 1 cup mayonnaise
  • 2 celery stalks finely diced
  • ¼ cup finely diced onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Classic Version Add-ins: 2 hard-boiled eggs, chopped1 tablespoon fresh dill, chopped1 teaspoon lemon juice¼ teaspoon garlic powder
  • Buffalo Version Add-ins : ⅓ cup Buffalo wing sauce¼ cup blue cheese crumbles2 green onions, chopped½ teaspoon celery salt
  • Southwest Version Add-ins : 1 can (4 oz) diced green chilies½ cup corn kernels¼ cup red bell pepper, diced1 tablespoon taco seasoning2 tablespoon fresh cilantro, chopped

Instructions

Prepare the Base:

  • In a large bowl, combine mayonnaise, diced celery, and onion.
  • Season with salt and black pepper.
  • Fold in the chopped chicken until well combined.

For Classic Version:

  • Add hard-boiled eggs, fresh dill, and lemon juice to the base.
  • Mix in garlic powder.
  • Chill in the refrigerator for 2 hours before serving.

For Buffalo Version:

  • Stir Buffalo wing sauce into the base mixture.
  • Add blue cheese crumbles and green onions.
  • Mix in celery salt until fully incorporated.

For Southwest Version:

  • Add diced green chilies, corn, and red bell pepper to the base.
  • Mix in taco seasoning and fresh cilantro.
