Instructions
In a medium bowl, combine the shredded chicken, diced avocados, Greek yogurt, lime juice, garlic powder, salt, and black pepper. Gently mix until evenly incorporated, leaving some avocado chunks intact.
Stir in the red onion and parsley until evenly distributed.
Warm the tortillas by stacking them, wrapping them in a damp towel, and microwaving for 30–60 seconds.
Divide the chicken avocado mixture evenly among the tortillas, placing it in the center of each one.
Optionally, add lettuce and sliced tomatoes on top.
Fold in the sides of the tortillas and roll tightly into wraps. Slice in half and serve immediately.
Notes
For a softer wrap, warm tortillas before filling. This recipe is best enjoyed fresh as the avocado will brown over time.
