Ingredients

  • 8 Sourdough bread - Slices
  • 2 cups Cooked chicken - Shredded or sliced
  • 2 Ripe avocados - Sliced
  • 8 Monterey jack cheese - Slices
  • 4 Sharp cheddar cheese - Slices
  • Butter - For spreading on bread
  • 2 tablespoon Mayonnaise - Mixed with garlic powder
  • 1 tablespoon Lime juice - For avocado + mayo mixture
  • ½ teaspoon Garlic powder - For mayo
  • Salt - To taste
  • Black pepper - To taste
  • ¼ teaspoon Smoked paprika - For flavor over avocado

Instructions

  • Slice avocados and toss with lime juice. Shred or slice cooked chicken. Butter one side of each bread slice. Mix mayonnaise and garlic powder. Heat skillet over medium heat.
  • Spread garlic mayo on unbuttered side of bread. Add chicken, season with salt and pepper. Add Monterey jack and cheddar cheese slices.
  • Layer avocado slices on top of cheese. Sprinkle smoked paprika. Add optional extras if desired. Top with second bread slice, buttered side out.
  • Place sandwich in heated skillet. Cook 3–4 minutes until golden. Flip and cook other side 3–4 minutes. Press lightly with spatula.
  • Remove from heat, let rest 2 minutes. Cut diagonally and serve warm.
