A crispy, cheesy, and creamy Chicken Avocado Melt Sandwich that tastes like it came from a cafe—but made in your own kitchen. Easy to assemble with leftover chicken, avocado, and melty cheese layered on golden sourdough.
Slice avocados and toss with lime juice. Shred or slice cooked chicken. Butter one side of each bread slice. Mix mayonnaise and garlic powder. Heat skillet over medium heat.
Spread garlic mayo on unbuttered side of bread. Add chicken, season with salt and pepper. Add Monterey jack and cheddar cheese slices.
Layer avocado slices on top of cheese. Sprinkle smoked paprika. Add optional extras if desired. Top with second bread slice, buttered side out.
Place sandwich in heated skillet. Cook 3–4 minutes until golden. Flip and cook other side 3–4 minutes. Press lightly with spatula.
Remove from heat, let rest 2 minutes. Cut diagonally and serve warm.
