Ingredients

  • 6 cups Red or russet potatoes - Cut into 1-inch chunks, unpeeled
  • 1 lb Smoked sausage or kielbasa - Sliced into ½-inch rounds
  • cups Shredded cheddar cheese - More if you like it extra cheesy
  • 1 packet Ranch dressing mix - Hidden Valley or store-brand
  • 2 tablespoon Butter - Melted
  • Salt and pepper - To taste
  • ½ teaspoon Garlic powder (optional) - For extra flavor
  • ½ teaspoon Onion powder (optional) - Optional boost
  • Green onions (optional) - Sliced, for garnish
  • Sour cream (optional) - For serving

Instructions

  • Wash and chop potatoes into chunks. Pat dry. Slice sausage into rounds and set aside.
  • Toss potatoes with melted butter, ranch seasoning, salt, pepper, and optional garlic/onion powder.
  • Layer potatoes in the baking dish, sausage on top. Do not mix.
  • Bake at 400°F for 30 minutes. Add shredded cheese and bake 10–15 more minutes until bubbly.
  • Garnish with green onions and serve with sour cream if desired.
