Ingredients

  • 1 tablespoon Olive oil
  • 12 oz Andouille sausage - Sliced into rounds
  • 1 cup Onion - Diced
  • 1 cup Celery - Diced
  • 1 cup Green bell pepper - Diced
  • 3 cloves Garlic - Minced
  • 1 ½ teaspoon Cajun seasoning - Adjust to taste
  • 1 cup Long-grain white rice - Rinsed and drained
  • 1 can Fire-roasted tomatoes - 14.5 oz, with juice
  • 2 cups Chicken broth - Preferably low sodium
  • 1 Bay leaf - Whole
  • 2 sprigs Fresh thyme - Or ½ teaspoon dried thyme
  • Salt & pepper - To taste
  • 2 tablespoon Green onions - Sliced, for garnish
  • 2 tablespoon Fresh parsley - Chopped, for garnish
  • 1 tablespoon Pickle juice - Optional, added at the end

Instructions

  • Prepare and brown the sausage
  • Sauté vegetables and toast rice
  • Add liquids, sausage, and seasonings to skillet
  • Simmer covered until rice is tender
  • Let rest, fluff rice, and garnish
