1cupPearl onions- Peeled
8ozMushrooms (button or baby bella)- Halved
3Carrots- Cut into chunks
3clovesGarlic- Minced
2cupsRed wine- Any dry red works
2cupsBeef broth
2tablespoonTomato paste
2tablespoonAll-purpose flour- For dredging beef
2tablespoonButter- Optional, for finishing sauce
2teaspoonFresh thyme- Or 1 teaspoon dried
2Bay leaves

Instructions
Cut chuck roast, season, dredge in flour, and brown in batches.
Cook bacon, then sauté onions, mushrooms, garlic, and tomato paste.
Pour in red wine, scrape brown bits, reduce by half.
Transfer everything to slow cooker, add broth, herbs, carrots; cook 6–8 hrs.
Remove bay leaves, adjust seasoning, add butter, garnish with parsley.
