Instructions
In a small bowl, combine the smoked paprika, garlic powder, salt, and black pepper. Season both sides of the chicken breast with the spice mixture.
Heat a skillet over medium heat. Add the cooking oil and swirl to coat the skillet. Once the oil is hot, add the chicken breast. Cook for 5-7 minutes on each side or until the chicken reaches an internal temperature of 165°F. Transfer the chicken to a clean cutting board to rest.
Let the chicken rest for about 5 minutes, then chop it into small, bite-sized pieces. Add ¼ cup BBQ sauce to the chicken and stir to coat.
Preheat the oven to 450°F (232°C). Place the prepared pizza dough on a pizza pan. Spread ½ cup BBQ sauce evenly over the dough.
Evenly distribute the shredded Monterey Jack cheese over the sauce. Then, top with the BBQ chicken, sliced jalapeños (optional), and red onion.
Bake the pizza for 10-12 minutes, or until the crust is golden and the cheese is melted and bubbly. Slice into 8 pieces and serve.
