Ingredients

  • ½ cup Dijon mustard
  • ½ cup honey
  • ¼ cup mayonnaise
  • 1 teaspoon fresh lemon juice
  • Salt and pepper to taste
  • 4 boneless skinless chicken breasts
  • 8 slices bacon
  • 2 cups fresh mushrooms sliced
  • 2 cups Colby Jack cheese shredded
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

Make Honey Mustard Sauce

  • Whisk together Dijon mustard and honey
  • Add mayonnaise and lemon juice
  • Season with salt and pepper

Cook Bacon

  • Cook bacon until crispy
  • Drain on paper towels

Prepare Chicken

  • Preheat oven to 375°F
  • Season chicken with salt and pepper
  • Sear in oiled skillet, 3-4 minutes per side

Cook Mushrooms

  • Sauté mushrooms until golden
  • Set aside

Assemble & Bake

  • Brush chicken with honey mustard
  • Top with mushrooms
  • Add bacon pieces
  • Sprinkle with cheese
  • Bake 15-20 minutes (165°F internal temp)

Notes

  • Use meat thermometer to check doneness
  • Make sauce ahead for better flavor
  • Pound chicken to even thickness
  • Grate cheese fresh for best melting
